Cabernet Franc

Most notably grown for blending with Cabernet Sauvignon and Merlot in the Bordeaux style but often produced into a bright, medium- bodied, peppery single varietal with aromas of tobacco, raspberry, bell pepper, cassis and violets. Originally from the Basque country in France but displaced for a while by Merlot, Cabernet Franc then populated a considerable area of North-East Italy and now in California, New Zealand and South Africa as well as many of the smaller wine producing areas such as Hungary. In most instances yields need to be kept below a certain maximum to avoid the over expression of undesirable herbaceous and grassy characters in the wine.
