All grapes were hand-harvested and meticulously sorted in the early morning at Cavalli to ensure optimal fruit quality. The Cabernet Sauvignon underwent fermentation in stainless steel tanks, with 3 to 4 pump overs per day to promote gentle extraction. In contrast, the Malbec, Petit Verdot, and Cabernet Franc were fermented in small open-top vessels, where manual punchdowns were carried out 3 times daily for more precise tannin management. Total time on skins was 11-14 days. Following gentle pressing, all components completed malolactic fermentation in barrel to round out texture and integrate the oak.
