An important blending component in white Bordeaux and now with the pedigree of being one of the most popular white wines in the world with primary flavours of pear, lemon, apple and green papaya and a waxy texture reminiscent of Lanolin. Two different schools of Semillon exist; warm climate wines such as those produced in South Africa usually utilise oak ageing to create a Semillon with ripe fruit flavours, rich buttery elements and a slightly higher alcohol. Cooler climate examples resemble their Sauvignon blanc counterparts with prominent citrus flavours, flower aromas, lower alcohols and much higher acidity.
