Rhenosterbosrug Chenin Blanc

Shellfish, Spicy food, Lean fish, Mild and soft cheese

Planted 1983, Swartland, Farm Rhenosterbosrug, Dry Land, Bushvine. Decomposed granite soils, with rich organic material. Aspect: Relatively flat / insignificant slope.

Extended ageing on the fine lees, barrel maturation until December when it is bottled.

Handpicked over 10 days between 21 and 23-Degrees Balling. Multiple picks for different components in the cellar. The first selections for freshness, higher natural acidity and structure and the later selection for mouthfeel and palate density. Crushed and pressed overnight, barrel fermentation in older oak vessel.
