Made from 100% whole-bunch pressed grapes, the wine underwent a slow fermentation in stainless steel tanks at 14°C and 400L French oak barrels. No malolactic fermentation was allowed, preserving freshness and precision. The wine spent 10 months on the primary lees before undergoing 43 months of secondary bottle fermentation, adding depth and complexity.
