Merlot

This versatile Merlot pairs beautifully with a variety of dishes, from grilled meats to hearty stews. Try it with a classic beef tenderloin, lamb chops, mushroom-and-thyme risotto, slow-cooked osso buco or a rich, tomato-based pasta dish. The wine’s fruit-forward profile also complements aged cheeses, such as sharp cheddar or gouda, and can be enjoyed with charcuterie selections featuring smoked meats and pâtés.

Grapes were sourced from vineyards in the Coastal Region, on mainly clay-loam soil.

80% of the wine was matured for 3 months in six-year-old 225L barrels and 20% in new 225L French and American.

Grapes were handpicked and cold-soaked for 24 hours. Fermentation was initiated with selected yeast strains and kept under 26°C. Malolactic fermentation was completed in tank.
