Shiraz Mourvedre Viognier

The depth and complexity of this wine make it an excellent companion for grilled meats and hearty roasts, like ribeye steak or roasted leg of lamb. Its bold character will stand up to rich, slow-cooked dishes like beef bourguignon or Moroccan lamb tagine. It will also pair well with venison, duck confit, robust cheeses like aged gouda, cheddar or blue cheese, and a charcuterie platter with cured meats, such as prosciutto, salami, and chorizo. For dessert, pair with a dark chocolate torte or a berry compote, served over vanilla ice cream or panna cotta.

Grapes sourced from vineyards in the Coastal Region on mostly clay-loam soils which are meticulously farmed.

The wines were transferred to barrels where malolactic fermentation was completed in a mix of a new (15%) and used French & American oak barriques. The wines spent 12months in barrels before blended, and it received a light filtration prior to bottling.

The Shiraz and Mourvedre grapes were harvested fully ripe, in the early morning. Viognier grapes were harvested ripe, once the skin changed to a slight yellow colour on the shoulder of the bunch where after it was whole-bunch pressed. After crushing, the must was cold-soaked for a week before the onset of fermentation. Selected Rhône yeast strains were used.
