Clairette Blanche
A Southern French variety gown widely in Provence, Rhône and Languedoc. Generally it is used in the production of full- bodied white wines and is often used to make Vermouth for which it is well suited as it has the tendancy to produce wines high in alcohol but low in acidity. Clairette blanche is one of 13 grape varieties permitted in the Châteauneuf- du- Pape. In South Africa and Australia this grape is often used in the production of sparkling wines. The Green apple, lime, peach, floral aromas are well matched to seafood dishes and a myriad of soft and hard cheeses. This grape varietal is mostly grown in the Veneto region of Italy where it is used to produce a light and mildly fruity wine sometimes with tart, bitter almond notes. Also known by its synonyms, Corvina Nera and Corvina Veronese. Wine quality is often negatively affected by the fact that the grapes ripen late and the vines produce only small amounts of the low tannin, thick skinned black berries.
