Noble Hill is an organic estate grower on the slopes of the Simonsberg mountains. We follow a regenerative farming philosophy and make delicate, fresh wines with a mineral structure. Our wines are fruitful structured elegant and above all authentic to their origin. Noble Hill is located on the the granitic northern slopes of the Simonsberg mountains which have produced South Africa’s finest wines for more than 300 years.
Description
Goblet pruning gives these Cinsault vines balance, poise, and strength. By opening the canopy and raising the goblet, we achieve increased airflow and even sun exposure. The grapes are picked mid-harvest and fermented with 30% whole clusters. Daily pigéage yields cheerfully light and elegant red fruit.
