Sauvignon Blanc

Lovely served chilled on its own and very enjoyable with summer foods and salads. Pairs well with white meats including chicken, pork chops and turkey as well as fresh seafood. Spices and herbs including parsley, basil, mint, tarragon, fennel and dill. Pairings with softer cheese like goat’s cheese.

Ideal winter conditions with good rainfall contributed to an even growth and provided an excellent foundation. Budbreak was consistently good and even. During harvest time, a cool season and moderate weather conditions resulted in slow ripening grapes, which gave vines the opportunity to develop exceptional flavour and colour. Picking of the grapes at their ideal ripening stage contributed to great primary aromas and development of berries to produce outstanding quality.

Grapes were de-stemmed, slightly crushed and immediately pressed. Fermentation was done in stainless steel tanks at low temperature. The wine was bottled soon after fermentation to preserve the fruit.
