Sangiovese Rose

In its food-friendly, easy to drink nature Sangiovese Rosé pairs well with many dishes from fresh summer salads to rich salmon/trout or creamy pasta with prosciutto and asparagus; and for a wow-worthy experience try it with a decadent white chocolate cheesecake.

Ideal winter conditions with good rainfall contributed to an even growth and provided an excellent foundation. Budbreak was consistently food and even. During harvest time, a cool season and moderate weather conditions resulted in slow ripening grapes, which gave vines the opportunity to develop exceptional flavours and colour. Picking of the grapes at their ideal ripening stage contributed to great primary aromas and development of berries to produce outstanding quality.

Grapes were harvested at two different ripeness levels and fermented with two different yeast strains added. Berries were de-stemmed and lightly crushed to allow for juice extraction; whilst a long and delicate press cycle was chosen for slow extraction of the colour and juice. Fermentation took place partially in stainless steel tanks and neutral oak for aromatic and colour stabilisation
