Haute Cabriere
Our wines are made using two noble cultivars, Chardonnay and Pinot Noir. The structure of Pinot Noir and the elegance of Chardonnay bring balance to our wines and a freshness to our Méthode Cap Classique. Our Méthode Cap Classique and related wines are produced under Pierre Jourdan, the name of the French Huguenot to whom the farm was granted in 1694. Our still wines are produced under the name of Haute Cabrière, paying tribute to Pierre Jourdan’s home town in France.
Description
The 2025 vintage of Haute Cabrière Pinot Noir Unwooded presents a vibrant ruby red hue, indicative of its fresh and lively character. The nose offers an abundance of red berry aromas, including strawberry and cherry, complemented by subtle mocha and cigar box nuances. On the palate, it is light and elegant, showcasing concentrated ripe cherry and cranberry flavors, underpinned by soft tannins and a refreshing acidity. This unwooded style emphasizes the pure fruit expression of Pinot Noir, making it an approachable and enjoyable wine.
Food Pairing
This Pinot Noir pairs well with a variety of dishes. Its light and fruity profile complements charcuterie, rare meats like steak tartare, and pasta dishes. It also harmonizes with vinaigrette-based salads and is a delightful companion to duck, tuna, and cured meats. Serving it slightly chilled enhances its refreshing qualities, making it suitable for both warm and cooler occasions.
