Grapes are selected from two vineyard sites of 5 hectares set in Greywacke soils at 350- 450 meters above sea level on Southwest facing slopes. The vines, which are an average age of 21 years.

The wine spent,14 weeks on the lees in tanks with occasional stirring, after which the wine is fined, filtered, and bottled.

Grapes are soft-crushed, and the must chilled for two days before fermentation for 14 days in stainless steel tanks

Chamonix is a Franschhoek wine estate set against the Mont Rochelle mountain, with vineyards planted to classic French varieties and shaped by cool breezes and stony clay-rich soils.
