Chardonnay Reserve

Chardonnay grapes from the Elgin region, comes from a single vineyard block planted on South facing slopes on shale soil situated in die middle of the farm at 400m above sea level.

80% of the juice is fermented and matured in French oak for 14 months with 45% being new oak and 35% second fill, 20% fermented and matured in concrete eggs for 14 months. The wine is kept on the lees for 90 days with the lees being stirred once a week.

The grapes are handpicked from a single block of Chardonnay on the estate. The grapes are whole bunch pressed. The juice is settled in stainless tanks for one day.

Chamonix is a Franschhoek wine estate set against the Mont Rochelle mountain, with vineyards planted to classic French varieties and shaped by cool breezes and stony clay-rich soils. Known for Chardonnay, Pinot Noir and Cabernet Franc, the estate produces mountain-influenced wines with freshness, structure and clear Franschhoek character.
