Wild House Mixed Case

Made with fruit from Paarl and Stellenbosch. Soft pressing, and settled for 48 hours. Naturally fermented in stainless steel tanks and kept on the gross lees for 7 months.

Chenin is the backbone grape varietal of South Africa; it’s the most profusely planted variety in our country and is closely associated to our wine-making identity. To capture the true sense of place and terroir, we’ve made this wine a 100% unoaked Chenin Blanc. Fermenting only in stainless steel ensures the freshness, character and liveliness of the wine is maintained. To tame some of this energy and add more complexity and depth to the final wine, it was kept it on its fine lees for approximately nine months. This also adds to the lush mouthfeel and keeps the wine fresher for longer.

Sourced from established vineyards on Paarl’s deep sandy loams, the fruit is hand-harvested and gently crushed to preserve freshness and purity. The juice undergoes natural fermentation in stainless steel tanks, with 20% of the blend matured in barrel to enhance complexity.

All fruit was hand-harvested and gently crushed with a proportion of whole-bunches to bring a leafy freshness to the juice. The juice is naturally fermented in stainless steel tanks and then allowed to undergo malolactic fermentation in 300 & 600 litre barrels. A tiny proportion of Franschhoek Syrah adds a light veil of white spice to the final blend.

Grapes for this wine were carefully hand-harvested and sorted. Most of the fruit comes from Paarl, but we added a small amount of Franschhoek fruit to the final blend to give it a bit of spice and ‘edge’. Naturally fermented in stainless steel tanks, 50% of this blend then undergoes malolactic fermentation in 300 and 600 litre French oak barrels (10% of which are new).
