Seaward Shiraz

This Shiraz pairs well with a variety of hearty dishes, making it a versatile choice for different cuisines. Ideal pairings include grilled meats such as lamb chops, beef steak, or pork ribs. It also complements spicy dishes like Moroccan lamb tagine, pepper-crusted tuna, and smoky barbecue. Hard cheeses, such as aged cheddar or gouda, also make a great match.

The grapes for this Shiraz are sourced from coastal vineyards where the influence of the cool Atlantic breezes helps to preserve the natural acidity and develop intense flavors. The vineyards are planted on soils rich in decomposed granite, which contributes to the wine’s minerality and complexity. Sustainable viticulture practices are employed, including careful canopy management and hand-harvesting, to ensure optimal grape quality.

The Spier Seaward Shiraz 2022 is aged for approximately 12-14 months in a combination of French and American oak barrels, with a portion of new oak used to impart subtle vanilla and spice notes. This aging process helps integrate the flavors and tannins, adding complexity and a touch of smokiness to the wine.

After hand-harvesting, the grapes are sorted and destemmed before fermentation in stainless steel tanks. This controlled environment allows for the precise extraction of color, flavor, and tannins. The wine undergoes malolactic fermentation to soften the acidity and improve mouthfeel. Post-fermentation, the wine is aged to add depth and complexity.
