Sparkling Chenin Blanc

The grapes were harvested at 19° 20° balling for optimum freshness and natural acidity. De-stemmed, crushing and pressing then takes place followed by settlement of the juice through a light clarification process. Cold fermentation in stainless steel tanks to preserve fruit and crispness. A final clarification is done before the wine is moved to a pressure tank and CO2 is added.

The long wet winter was followed by a temperate growing season. Persistent winds during flowering led to a slight drop in yields, but lower yields meant looser bunches which helped keep disease pressure low. e canopies showed robust growth with healthy foliage, protecting grapes from excessive sun exposure. Pre-harvest was dry and moderate, allowing for slow ripening resulting in enhanced aromatics. The Chenin Blanc vineyards in the Agter-Paarl region are sustainably grown and 100% dry-farmed (unirrigated). These bush-vine vineyards are mostly over 25 years in age. e soils are primarily Malmesbury Shale, which impart minerality and fresh acidity.
