Pinotage

Slow-cooked oxtail, roast lamb, mushroom dishes or grilled meats.

Grapes are sourced from two trellised vineyards located on the same property in the Polkadraai Hills in Stellenbosch. One vineyard was planted in 1997 on a South facing slope, while the other West facing vineyard was planted in 2013. Weathered granite soils with gravelly clay in the subsoil, this site produces a wine with very refined tannins.

Matured for 7 months in neutral 225L barrels.

Grapes were hand-picked and kept in cold storage overnight. 80% whole bunch and 20% destemmed, followed by spontaneous fermentation. Pressed after 8 days on the skins, aged in neutral 225L barrels for 7 months, then lightly filtered before bottling.

Illimis intends to honestly harness what nature offers, and follows a minimal intervention principle as far as possible, allowing the wine to express its origin with clarity, finesse, and complexity. Illimis, the Latin word for clarity, signifies winemaker Lucinda Heyns’ crystal clear winemaking philosophy. Wine should be a window to where its vineyard is rooted.
