Cinsault

Grapes for this wine are sourced from an old bushvine vineyard that was planted in 1974 in Darling on well drained, red, loam soils with granitic origin. This Cinsault is made in a more delicate style and is intensely aromatic, yet presents a layered complexity from this old site.

Aged in neutral 225L barrels for 7 months. Lightly filtered prior to bottling.

Grapes were picked by hand on 18th March. 100% whole bunch, spontaneous fermentation. Pressed after 11 days on the skins.

Illimis intends to honestly harness what nature offers, and follows a minimal intervention principle as far as possible, allowing the wine to express its origin with clarity, finesse, and complexity. Illimis, the Latin word for clarity, signifies winemaker Lucinda Heyns’ crystal clear winemaking philosophy. Wine should be a window to where its vineyard is rooted.
