Nauticus

The chilled grapes were all sorted by hand before destemmed and gravity fed into fermenters. The juice was left to settle for 48h in a stainless steel tank, before being racked to concrete eggs and seasoned French oak barrels to start the fermentation. The remaining 55% was left to ferment in stainless steel thank. All fermentations were left to ferment spontaneously, although some were inoculated to help complete the dry fermentation. The fermentation lasted about 3 weeks.

The grapes come from two sites specifically selected for their cool climates and closeness to the sea. Both vineyard sites are located less than1km away from Hasher Family Wines. The 2023-2024 wine growing season was marked by resilience and promise. While a devastating September 2023 storm ravaged roads and scarred mountains, our vineyards emerged unscathed, protected by cover crops and efficient drainage systems. This event reinforced our deep respect for nature's power. The season began with an early bud break, followed by a spring of favourable temperatures. As summer progressed with warmer temperatures, berry sizes trended smaller than average, but this resulted in concentrated flavours and aromas. Despite the dramatic prelude, the growing season proceeded smoothly to an intensely flavourful vintage that showcases both the challenges and triumphs of this remarkable year. Each vineyard was handpicked individually at optimal ripeness. The first vineyard was picked on the 8th of February 2024. The last grapes were picked on the 21st of February.

After fermentation the wine was matured in seasoned French oak barrels and concrete egg for 5 months.
