Description
The 2025 Nauticus pours a pale straw, greeting the nose with fresh fennel, green herbs, and a briny, zesty oyster-like salinity that speaks clearly of its coastal origins. White almond and flinty minerality add quiet complexity beneath. On the palate, the wine moves like a wave — a crisp, refreshing rush of acidity on entry that gradually softens and opens, inviting you to linger. Extended lees contact in concrete eggs lends a satisfying textural depth and fullness, while the finish is long, salivating, and beautifully saline.
Food Pairing
This is lovely wine to drink as an aperitif, but it also accompanies fresh summer salads and cheeses. An ideal partner for a salmon ceviche, balancing the crisp citrus and meatiness of the fish.
