Time at Baccō is a slow rhythm, gently flowing like the seasons. Just as the life cycle of the vine cannot be rushed, creating any rare work of art requires patience. We believe that true wellbeing lies in synergy with nature, nurturing our environment and savouring its gifts. Our wines are made with this mindful, unhurried approach, to be generous and engage all the senses.
Baccō is the brainchild of dynamic father-and-daughter team Nathan and Carla Jankelowitz. Long inspired by the opulence of the Super Tuscan region, they dreamt of bringing this holistic, experiential brand of luxury to South African wine lovers. A dream that has now become a magnificent reality.

Nathan Jankelowitz
Quantity Surveyor turned wine Estate owner through passion for the art form of wine. Driven to create wines that will stand above others on an international stage and an Estate offering the public a rare experience
Carla Jankelowitz
Carla is a qualified patisserie chef out of Le Cordon Bleu, London. She runs the ‘Sensi di Bacco’ tasting room and restaurant, and delights visitors with her brand of Cicchetti – Italian-inspired small plates. The infectious passion exuded by her Father, encourages her to create unrivalled holistic experience
Steff Hoefnagels:
Chef Steff graduated from SA Chefs Academy and worked under mentor Neill Anthony before gaining international experience. With French influence and his creativity using seasonally fresh ingredients, Chef Steff creates art on a plate that resonates with Sensi de Baccō objectives
Martin Smith
Our well-travelled consultant cellar master perfected his craft internationally as well as locally. Martin is a third-generation winemaker whose love of viticulture and oenology was gifted to him from his father and grandfather.
Julia Blaine
Winemaker Julia graduated from Stellenbosch University with a BSc (Viticulture and Oenology). Her experience stretches through France, USA and various regions of South Africa. Julia’s passion is to gently facilitate and nurture the winemaking process from berry to bottle and beyond
Anita De Oliveira
Nathan’s continued infectious passion inspired Anita to explore her curiosity in wine by enrolling in the Cape Wine Academy programme and currently completing her Diploma course and together with her ability to keep a tight rein on the administration function of the farm adds to the rare experience created.
3. THE WINERY
Our Tuscan-inspired modern cellar is situated in the heart of the beautiful Paarl winelands, Western Cape, South Africa. The first 5 hectares of vines were planted in 2016 and a further 10 hectares planted by 2019 which are meticulously managed to produce a restricted yield crop of consistent ultra-premium quality grapes.
The energy-efficient, state-of-the-art cellar, features technologically advanced grape sorting and temperature control systems. The cellar was designed to enable minimal intervention winemaking, making optimal use of gravity flow and reducing the need for pumping.
4. SENSI DI BACCO
The Baccō tasting room and restaurant opened its doors on 1 December 2022 and offers its visitors a rare wine and culinary experience – an immersion in luxury that engages all the senses – thus, Sensi di Bacco. Carla’s enormous energy provides an everchanging culinary experience, not only through seasonal changes, but a monthly changing menu to retain interest and excitement. Whether its the canapes or the chicchetti, there is a wine which pairs beautifully with the food.
Summer dinning on the patio with the sun reflecting off Paarl Rock and cold winter days warmed by the fireplace inside.
5. OUR WINES
Winemaking at Baccō is an art, where tradition is revered but enhanced by the use of cutting-edge innovation and modern technology. It is our never-ending pursuit of perfection, to capture in every glass a story of a specific site and vintage. Expect interesting, age-worthy wines made for enjoyment. There are 2 ranges in our offering, The Prelude Range and the Bacco Range.
PRELUDE RANGE
These accessible wines offer the perfect starting point to explore the Baccō brand. Made using minimal intervention, they are marked by true varietal and site expression.
2019 Prelude Red Blend
This Bordeaux-style blend exhibits a striking deep purple colour with abundant aromas of sweet cassis, chocolate and red berry preserve. Well integrated oak and supple tannins bring warmth and depth to this medium-bodied wine.
2020 Prelude Red Blend
This 55% Malbec 45% Cabernet Sauvignon blend, spent 22 months in barrel followed by 18 months in bottle before release. The fruit aromas of black current compote, cassis, plum black cherries as well as graphite, baking spices and cedar, follow through on the pallet with soft smooth fine and well-integrated tannins. A dry wine with a medium mid-palate and a long finish.
2020 Prelude Syrah
Our Syrah is made in a classic tradition showing a restrained elegant character with intricate aromatics. Maturation took place in neutral oak over 22 months, bottled and spent a further 12 months in bottle before release. A concentrated wine with a distinct presence on the palate, tannins are well integrated and cover the full palate providing a lingering finish with cherry, tobacco, black fruits and soy sauce showing great balance of savouriness, spice and fruit.
BACCŌ RANGE
The Baccō range represents our finest pockets and batches of fruit in a particular vintage. Made in limited quantities, these wines are layered and complex – the hallmark of a patient approach in the vineyard and cellar.
2022 Baccō Rosé
The aim with our Rosé is to produce a classical styled wine that is elegant and engaging. Light in colour but substantial in taste and presence. This Malbec driven rosé has aromas of strawberries, peach and Turkish delight which lingers on the palate providing a delicate and gentle mouthfeel.
2022 Baccō Vermentino
An Italian cultivar which is a rare varietal wine in South Africa. It has however, taken to our soils and climate with great ease and vibrant expression, typical to the varietal, of daffodil, ocean spray, lime, and yellow grapefruit aromas and flavour. The mouthfeel is medium weight with great length and a bright finish yet complex. Good balance between fruit and acidity
2022 Baccō Chardonnay
Our maiden vintage of this varietal. Our terroir has brought out the full spectrum of this cultivar’s complex flavours. Fermented and matured for 12 months in, 20% new French oak barrels and the balance in neutral oak. Flavours and aromas of spiced pear, litchi, flint, apple tarte tatin, lime zest and preserved lemon. The well integrated oak elevated the existing aromas and offers a wine that has a creamy mid-palate and is bright and lingering.
2019 Baccō Cabernet Sauvignon Malbec
This vintage was our flagship blend comprising of 72% Cabernet Sauvignon and 28% Malbec. Sweet nettle, blackcurrant and cassis feature on the nose and persist onto the palate along with subtle savoury and mineral notes.
Only 3 000 bottles of this exclusive wine was crafted, and after a patient winemaking process which included 22 months in 225L new oak barrels and 18 months bottle maturation, it truly represents our ethos that time is the ultimate luxury.
2020 Baccō Red Blend
A Bordeaux-style blend, 61% Cabernet Sauvignon, 32% Malbec, 7% Merlot. Following meticulous viticultural management, the grapes are double sorted, gently crushed, fermented in stainless steel tanks, transferred into new French oak barrels for 22 months, bottled, and undergo another 18 months of maturation before release. This wine presents with cedar, cranberry, black forest cake and toasted vanilla aromas, these follow through on the palate with additional Amarena cherries, wild honey and balsamic. On the palate the wine is silky smooth, has well integrated tannins with a mouth-filling presence and weight. Bright acidity lifts the wine and leaves and long lingering finish.
