Sing-a-Wing Sauvignon Blanc

Sauvignon Blanc pairs well with briny, sour cheeses such as Goat's milk cheese, yogurt and Crème fraîche. It is also well matched with white meats such as chicken, salmon, sea bass and crab.

A rainy and cool winter season allowed the vines to get ample rest. Average winter rainfall was 585 mm. Hail and rain in September caused damage to the vines and further wind during flowering also influenced yields. A dry ripening season required careful monitoring of soil moisture to ensure perfect ripening conditions. Despite the cool season, favourable weather during ripening allowed for even budding. A vintage of excellent quality with lower yields.
