Sing-a-Wing Sauvignon Blanc

Sauvignon Blanc pairs well with briny, sour cheeses such as Goat's milk cheese, yogurt and Crème fraîche. It is also well matched with white meats such as chicken, salmon, sea bass and crab.

A cool and wet ripening season meant little irrigation was necessary yet careful canopy management was required to avoid vigorous vineyard growth. Uneven budding was experienced on certain cultivars which was carefully managed, but some like Sauvignon Blanc thrived. Veraison was earlier than in the previous season, and was even due to our cool climate location. Precipitation during the ripening period delayed harvest and management of the accompanying disease pressure was necessary. Despite the challenging season, our well managed vineyards produced high-quality grapes.
