Pofadderbos Sauvignon Blanc

Innovative winemaking techniques, cold fermentation with selected yeast strains tanks and lees contact for five months.

The winter of 2021 just kept on going right into November. This created the "conditions" that we are so famous for with wet windy and cold weather all the way into the flowering season, the result of a small (3.7th/a) but healthy crop. Even our neighbouring wheat farmers was still harvesting wheat right up to Christmas. The rest of the growing season was modest with a cool dry January and February's late Winter caused that we only started the harvest on 15 February, a full 2 weeks later than normal. Most Sauvignon and Semillon grapes was picked between 20 and 23 balling up to the 10th of March. It is exciting to see our younger vines planted on Ribokrand and Uintjieskuil coming into full production and to see the impact on our final cuvee, indeed very promising.
