Adamastor

The Sauvignon Blanc component was cold fermented with selected yeast strains in stainless steel tanks to preserve freshness and aromatics. The Semillon was barrel fermented and matured on its lees for 10 months in 500-litre French oak barrels, adding texture, depth and subtle oak complexity to the final blend.

The grapes come from Africa’s southernmost vineyards in Elim, located near Cape Agulhas and exposed to constant cooling Atlantic winds. The soils are rocky and mineral-rich, contributing to the wine’s structure and salinity. The 2022 vintage was shaped by an unusually long winter that extended into November, bringing wet, windy and cold weather through flowering. This reduced yields but ensured healthy fruit. A cool, dry January and February followed, with harvest starting two weeks later than average on 15 February. The Semillon and Sauvignon Blanc vines are 21 years old.

Matured for 10 months on lees in a combination of stainless steel (Sauvignon Blanc) and 500-litre French oak barrels (Semillon). The wine is designed to age gracefully for several years, developing additional honeyed and nutty notes over time.
