The three vineyards were harvested separately at optimal ripeness to enhance the rich and elegant fruit flavours. The grapes are hand-picked in the morning to preserve the fruits’ freshness.

After secondary fermentation, the wine is moved to older 300lt barrels for 12 months to impart subtle oak compounds into the wine and round off the mid-palate.

The berries were destalked and cold-soaked for 24 hours to provide significant colour extraction, following which the wine was inoculated. Once fermentation commences in open top tanks, regular punch downs are done to extract colour and flavour. The post-fermentation free run juice is then extracted and placed into stainless steel tanks where malolactic fermentation occurs.
