A 5% portion of Sémillon is blended with the Sauvignon Blanc to add depth to the palate. The wine is gently pressed, and 100% of the Sémillon component is fermented and aged in large 2500L foudres to enhance richness.
The Sauvignon Blanc vines range from 3 to 30 years old, planted across 23.5 hectares in Elgin, with elevations between 240m and 400m. The vineyards are primarily on Bokkeveld shale soils, with south and southeast-facing slopes, ideal for growing Sauvignon Blanc with layered complexity.
