Estate Chardonnay

This Chardonnay pairs well with a variety of dishes, including creamy pastas, salmon, poultry, pork, and game birds. It also works beautifully with seafood dishes like mussel soup due to its balanced acidity and mineral-driven character​.

The Chardonnay grapes come from 14.4 hectares on the estate, planted on decomposed Bokkeveld shale soils with underlying clay. The vineyards are situated at elevations of 320-385 meters on east, southeast, and south-southwest facing slopes. The vineyard includes clones such as 9, 76, 95, 96, 175, 270, 548, and 1066, with vine ages ranging from 3 to 33 years​.

The wine was aged in French oak barrels, with 26% new oak, 26% second fill, and the rest in third and fourth fill barrels for nine months. Lees stirring was kept to a minimum to retain freshness and clarity​.

The grapes were whole-bunch pressed and settled overnight without the use of settling agents. The juice was then transferred to French oak barrels (26% new, 26% second fill, the remainder third and fourth fill) for wild fermentation. Lees stirring was minimized to maintain brightness and energy, and the wine remained on the lees for nine months before blending​.
