The grapes are handpicked into harvest crates early in the morning to ensure the temperature in the grapes stay as low as possible to preserve fresh flavours. The grapes were pressed whole bunch in an Inert Press, which means no oxygen contact took place in the pressing process. The juice settled for 48hrs and was then a portion was fermented in stainless steel and the other portion in French oak barrels.
