Cape Late Bottled Vintage

The grapes were received during the early morning. Crushing and de-stemming commenced, and the mash was pumped to an open-top fermentation tank. Whereafter the mash was inoculated with commercial yeast. Fermentation temperatures were held between 26-30°C. Only punch downs were done, three times per day, on this wine. With maceration lasting between 7-10 days. Malolactic fermentation was done in stainless steel tanks after which the wine was fortified to reach an ABV of 18,5%.

After fortification the wine was taken to French oak barrels an aged for 210 months (17,5 years). In 2022 the barrels were tasted, emptied and only 3000 bottles were filled for this vintage.
