Montecarrubo is a boutique winery located on the remains of an ancient volcanic crater in Sicily, Italy. The estate was founded in 2005 by Peter Vinding-Diers, a renowned Danish winemaker, and his wife Susie. Montecarrubo focuses on crafting high-quality wines that reflect the unique terroir of the region. The vineyards benefit from constant sea breezes and volcanic soil, which contribute to the distinct character of the wines. Montecarrubo produces a variety of wines, including blends of Syrah, Cabernet Franc, and Merlot. The wines are known for their vibrant flavours and elegant profiles. The winery uses traditional methods such as hand harvesting and fermentation in cement vats, followed by aging in old Pomerol barrels. Some of their notable wines include "Il Carrubo" and "Vignolo," which have received high praise for their complexity and richness.
Description
The '21 has a good Ruby colour, clean nose full of 'graphite' and minerals which come again on the palate. The aftertaste is clean and very precise.

Il Carrubo is a wonderful, gastronomic wine that, with its inherent wildness, fits like a glove with precisely game - e.g. venison tenderloin with venison sauce and hasselbach potatoes - or for paprika-marinated pork chops on the grill.
