After overnight cold storage grapes were de-stemmed and crushed into red ferment tanks. Cold maceration occurred for 3 – 7 days. The wine was then fermented under controlled temperatures until dry. The skins were then lightly pressed.

These Walker Bay vineyards of Hemel-en-Aarde Ridge are situated within close proximity to the Atlantic Ocean. The maritime climate being more “temperate” in style, where parallel mountain ranges channel the southerly sea breezes through the appellation during the summer. These winds in turn bring regular sea mists and overcast conditions to the valley and with it more even temperatures. The average temperature is 19° C and rainfall, approximately, 750mm per year. Two blocks of Shiraz were harvested separately by hand enjoying cool early morning temperatures. The grapes were harvested in two different batches throughout March. This was carried out in order to achieve a more complex wine profile. One block was managed with more dappled light in the canopy to ensure spicy aromas and a savoury element and the other block with greater exposure to sunlight for primary fruit weight and intensity.

The wine racked into a selection of French Oak Barriques for 12 months ageing and maturation. Final blending occurred 2 months prior to bottling and the wine was allowed to develop further in bottle prior to release.

Grapes from seven different vineyards were harvested by hand in the cool early morning temperatures and kept overnight in cold storage. After overnight cold storage they were sorted, destemmed into red ferment tanks. 20% of the fruit was eft as whole bunch.. Cold maceration occurred for an average of 3 days after which the cooling was turned off and the juice was allowed to ferment spontaneously. The wine was then fermented under controlled temperatures until dry.

The Pinot Noir planted on our farm in the new ward of Hemel-en-Aarde Ridge, 10km in proximity to the Atlantic Ocean. These winds in turn bring regular sea mists and overcast conditions to the areas and with it more even temperatures. The average temperature is 19° C and rainfall, approximately, 750mm per year.

The skins were then lightly pressed, and then racked into a selection of French Oak barrels for 11 months ageing and maturation. Final blending occurred one month prior to bottling and after bottling.

These batches of Sauvignon Blanc and Semillon grapes are harvested early in the morning and then de-stemmed and crushed at cold temperatures. The skins are pressed lightly, and the juice left to settle for a period of 48 hours at 10° C. The Sauvignon Blanc and Semillon are spontaneously fermented separately in stainless steel tanks and maintained at temperatures between 12-18° C until the wine is dry. After fermentation, the wines are racked off the gross lees and blended.

The grapes were picked at varying stages of ripeness throughout early to mid-March in order to achieve a more complex wine profile.

Thereafter the wines are left on the fine lees for six months before filtration and bottling occurs.

This Chardonnay bend was compiled of six different vineyards. Grapes from these batches were harvested early in the morning and then pressed at cold temperatures to preserve flavours and aromas. The juice was left to settle for a period of 24-36 hours at 10°C. The Chardonnay juice is then racked of the settled lees and into a selection of Burgundian oak puncheons (500L) and fermented until the wine is dry. The juice was allowed to naturally warm up after which the wine spontaneously fermented.

All grapes were harvested by hand in cool early morning temperatures. The grapes were harvested in 6 different batches from 19th of February 2023 until 6th of March 2023. This ensures a more complex wine profile and to express terroir and clone variation. Earlier picking captures the perfumed green citrus fruit profile and the later portion to ensures a more yellow fruit profile with complexity on the palate.

The wine was then matured on gross lees in the barrels for 9 months with minimal stirring. The wine was then blended one month prior to bottling.
