Metis Sauvignon Blanc

Metis is a collaboration between Klein Constantia and Pascal Jolivet from the Loire Valley. The vineyard benefits from Constantia’s cool-climate terroir, with maritime influences contributing to the freshness and structure of the wine​.

The wine was aged without the use of oak, which preserves its fresh and flinty character. It has the potential to age well for up to 10 years​.

The winemaking approach here is minimalistic, inspired by Jolivet's philosophy from Sancerre. The wine is fermented using wild yeasts and avoids any heavy intervention, letting the vineyard express itself fully through the wine​.
