The grapes for Klein Constantia MCC Brut are sourced from cool-climate vineyards in the Constantia Valley, influenced by maritime breezes from False Bay. Decomposed granite soils and elevated sites contribute to natural acidity, moderate sugar accumulation and finesse, which are essential for traditional-method sparkling wine production.

The wine undergoes extended lees ageing in bottle before disgorgement to develop texture, autolytic complexity and integration.

Base wines are vinified separately before blending, followed by secondary fermentation in bottle according to the Méthode Cap Classique tradition. Fermentation and ageing are carefully managed to preserve freshness while building complexity and fine mousse.
