After the grapes were picked the whole bunches were fermented in an open-top tank. Where the grapes were punched down three times a day. Whereafter they were pressed with the stems on. The gentle pressing ensure full-flavoured wines with soft, balanced tannins.

The distinct ravine which embodies Stellenbosch Kloof harnesses all the qualities of a well-orientated compass. Varying elevations and aspects allows us to grow a selection of classic varieties to specific sites that optimise this expression through their location. The cooler south-facing aspect, hosts the more sensitive and aromatic white-skinned grapes varieties. The grapes were harvested at optimal ripeness on the 8th if April 2022 at approximately 22.5°B
