Real McCoy Riesling

Harvested in the early mornings to preserve freshness, the grapes were pressed in a pneumatic press, separating the free-run juice from the press fraction. After two days of settling, the clear juice was inoculated with a French yeast strain and underwent cold fermentation at 15°C in stainless steel tanks. Fermentation was halted at the optimal balance between residual sugar and acidity to retain a hint of natural fruit sweetness.

The grapes are sourced from vineyards situated at 300 meters above sea level, planted on decomposed granite soils. These 38-year-old vines benefit from the cooler south- and east-facing aspects unique to the Stellenbosch Kloof, which, along with maritime influences from False Bay, contribute to the development of intense flavor compounds in the grapes. ​
