Real McCoy Riesling

The Real McCoy Riesling 2024 pairs exceptionally well with lighter Asian cuisine, including Thai curries, chili prawns, seafood dishes, and sushi, complementing the wine's balance of sweetness and acidity.

The grapes are sourced from vineyards situated at 300 meters above sea level, planted on decomposed granite soils. These 38-year-old vines benefit from the cooler south- and east-facing aspects unique to the Stellenbosch Kloof, which, along with maritime influences from False Bay, contribute to the development of intense flavor compounds in the grapes.

This wine is crafted in a fresh, youthful style and is intended for early consumption to appreciate its vibrant fruit profile.

Harvested in the early mornings to preserve freshness, the grapes were pressed in a pneumatic press, separating the free-run juice from the press fraction. After two days of settling, the clear juice was inoculated with a French yeast strain and underwent cold fermentation at 15°C in stainless steel tanks. Fermentation was halted at the optimal balance between residual sugar and acidity to retain a hint of natural fruit sweetness.
