The Haute Cabrière Chardonnay Reserve 2022 exhibits a pale gold color with bright clarity. On the nose, it offers enticing aromas of ripe citrus fruits such as lemon and grapefruit, complemented by notes of green apple, pear, and a hint of tropical fruits like pineapple. Subtle nuances of vanilla, butterscotch, and toasted almonds reflect the influence of oak aging. On the palate, this wine is medium to full-bodied, with a creamy texture and flavors of baked apple, lemon curd, and a touch of spice. The wine's vibrant acidity provides freshness, leading to a long, elegant finish with a lingering minerality and a hint of oak.

The Chardonnay grapes for this wine are sourced from vineyards in the Franschhoek Valley, known for its diverse soils and cool climate. The vineyards are planted on slopes with well-draining soils rich in granite and clay, which contribute to the wine's mineral character. The cool climate helps to retain the natural acidity of the grapes while allowing them to ripen slowly, developing complex flavors. Sustainable farming practices are implemented to enhance the health of the vines and ensure high-quality fruit.

After hand-harvesting, the Chardonnay grapes undergo gentle pressing to extract the juice, which is then fermented in French oak barrels. The fermentation process is conducted using a combination of natural and cultured yeasts to develop complexity and character. A portion of the wine undergoes malolactic fermentation, which softens the acidity and adds a creamy texture. The wine is aged on its lees for several months, with regular stirring (batonnage) to enhance mouthfeel and integrate flavors.

Our wines are made using two noble cultivars, Chardonnay and Pinot Noir. The structure of Pinot Noir and the elegance of Chardonnay bring balance to our wines and a freshness to our Méthode Cap Classique. Our Méthode Cap Classique and related wines are produced under Pierre Jourdan, the name of the French Huguenot to whom the farm was granted in 1694. Our still wines are produced under the name of Haute Cabrière, paying tribute to Pierre Jourdan’s home town in France.
