Old Vine Chenin Blanc

Fish, light white meat (chicken), grilled cauliflower (South African style)

The grapes originate from a single vineyard, the prestigious Karibib Vineyards & Wine Craft, in the desirable Polkadraai hills of coastal Stellenbosch. The vines grow on high quartzite granitic soils at an altitude of 200m and farmed impeccably by Jozua Joubert under the philosophy of working as closely with nature as possible. At 35-years old, the vines have now reached ‘Old Vine’ status, associated with lower yields and a higher concentration of flavours.

A natural fermentation took place for 16 days in barrel, followed by a complete natural malolactic fermentation. After 9 months of maturation, wines were racked for the first time, filtered gently, and bottled.

Grapes were hand-picked and cooled overnight down to 4C. Grapes were then sorted and pressed as whole bunch clusters and immediately transferred to barrel, with no settling.
