Gavi di Gavi

The best friend of delicate and elegant food, from tasty appetizers to seafood and fish dishes. Its structure and minerality makes it ideal for rice salads, vegetable pies and light pasta dishes. It goes well with fresh cheese with a soft texture.

The vineyards are located in Rovereto and throughout the surrounding district of Gavi. They are positioned on medium-high hillsides (200-300m asl). The soil is sandy with a high content of arenaceous marl. Planting density is 4,400 plants/ha.

In stainless steel tanks for 2-3 months. Then, during spring, cold stabilization takes place followed by bottling.

The grapes are harvest around mid-September and undergo soft pressing before being immediately separated from the skins. The fermentation is carried out at low temperature - 18°C - (85% in stainless steel, 15% in barriques), prior to refrigeration and static racking of the must.
