Eight Rows Sauvignon Blanc 2022

The winemaking process involved crushing and de-stemming the grapes reductively, followed by 8 hours of skin contact. After pressing and settling for 36 hours, the juice was racked and inoculated with Vin7 yeast for fermentation at controlled temperatures (14-16°C). The wine underwent lees contact for 5 months, stirred weekly to enhance mouthfeel and concentration. The wine was bottled unfiltered​.

The grapes are sourced from eight select rows within a premium Sauvignon Blanc vineyard at Diemersdal Estate in Durbanville. The grapes were harvested at night at 23.5° Balling to maintain freshness.

The wine spent 5 months on the lees to develop its texture and complexity.
