Maestro White

The grapes are whole bunch harvested, with only the Chenin Blanc component being whole bunch pressed. The Roussanne, Marsanne and Grenache Blanc were all destemmed and received 4-6 hours of skin contact before being pressed and naturally fermented in a combination of French Oak barrel, Concrete Egg, Foudre and Terracotta Amphora.

Vertical shoot positioned vineyards allow for optimum ripening and ideal sunlight exposure of fruit. There is a good exposure of slopes to cooling southern breezes off False Bay. Vineyards are established on slopes with soils of weathered granite and sandstone. Yields are controlled to between 7 and 8 tons per hectare. A cold, wet winter preceding the 2021 growing season resulted in delayed budburst and a similarly delayed harvest. Flavour development peaked early resulting in full-flavoured, ripe styled Roussanne and Grenache Blanc with healthy levels of natural acidity this year.

Maturation took place for 10 months in these same vessels.
