Vertical shoot positioned vineyards allow for optimum ripening and ideal sunlight exposure of fruit. There is a good exposure of slopes to cooling southern breezes off False Bay. Vineyards are established on slopes with soils of weathered granite and sandstone. Yields are controlled to between 7 and 8 tons per hectare. A mild yet wet winter ensured optimal soil conditions as we moved into the growing season. The relatively cool spring, interspersed with occasional rain, led to delayed bud break and, in some isolated cases, uneven flowering. However, the warm weather in January helped to alleviate this early season unevenness. The continued moderate weather throughout the season allowed the harvest to progress at an even pace, enabling our winery team to give the utmost attention to each parcel of grapes arriving at the winery.

Maturation took place for 8 months in these same vessels.

The Roussanne, Marsanne and Grenache Blanc were all destemmed and received 4-6 hours of skin contact before being pressed and naturally fermented in a combination of French oak barrel, Concrete Egg, Foudre and Terracotta Amphora.

Viticulturally, DeMorgenzon has predominantly south-facing slopes create a cooler microclimate in an otherwise warm region. This allows for the production of finely poised, ethereal Chenin Blanc and Chardonnay, as well as sophisticated, highly aromatic Syrah and Cabernet Sauvignon. In keeping with their vinous philosophy, the estate is farmed regeneratively, fostering biodiversity and soil vitality to create a balanced, living ecosystem in the vineyards.
