A festive aperitif, but can be used widely with white fish and seafood!

All grapes are grown on Constantia Uitsig, with a Mediterranean climate with cool sea breezes from False Bay during the growing season. Soils are alluvial decomposed granite from the slopes of Table Mountain. The soils are deep, well drained, and have a high reflection rate.

The base wine is bottled with sugar and yeast to start the secondary bottle fermentation after which the wine spends 36 months on the lees.

Whole bunch pressing ensures low phenols and the cleanest juice possible. Fermentation is then done in 30 % old oak barrels and in 70 % stainless steel tanks. Malolactic fermentation is carried out.

Constantia Uitsig is a historic Constantia wine estate focused on a small, considered range of South African wines. Rooted in one of the Cape’s oldest wine regions, the estate produces wines shaped by cool coastal influence, classic varieties and a clear sense of place.
