A festive aperitif, but can be used widely with white fish and seafood!

Both the Chardonnay and Pinot noir vineyard parcels were specially selected for this wine from the Darling area. The Chardonnay was hand harvested at 18-19 Brix and the Pinot noir at 19-20 Brix.

The wine has spent a minimum of 12 months on the lees before disgorgement.

The grapes were whole bunch pressed to ensure low phenol extraction. The Chardonnay and Pinot noir components were fermented separately in stainless steel tanks at 14 degree Celsius. The final blending was done before bottling and second fermentation in the bottle.
