The Chardonnay grapes are grown on Constantia Uitsig, with a Mediterranean climate with cool sea breezes from False Bay during the growing season. Soils are alluvial decomposed granite from the slopes of Table Mountain. The soils are deep, well drained, and have a high reflection rate.

The wines are matured for an additional seven months in barrels before final blending and bottling.

Full phenolic ripeness is achieved before harvesting. The grapes are hand-harvested and whole bunch pressed at the cellar. Fermentation takes place in temperature-controlled French oak barrels, of which 30% are new, with the new oak component undergoing malolactic fermentation.

Constantia Uitsig is a historic Constantia wine estate focused on a small, considered range of South African wines. Rooted in one of the Cape’s oldest wine regions, the estate produces wines shaped by cool coastal influence, classic varieties and a clear sense of place.
