Fermentation occurs under controlled conditions to extract the fullest expression of the fruit, followed by aging in French oak barrels. The wine is aged for 15 months, adding layers of complexity from the oak​.

Cederberg is a high-altitude wine estate in the remote Cederberg Wilderness Area, owned by the Nieuwoudt family for generations.
