The blend consists of 30% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne, 30% Chardonnay sourced from the best crus in the Champagne region, and 40% Pinot Meunier from the Vallée de la Marne and the southern slopes of Epernay. This diverse selection of vineyards ensures high-quality fruit and complexity in the final product.

This Demi-Sec champagne is ready to be enjoyed upon release but can also age gracefully for a few years, developing more complex flavors over time.

The vinification process involves fermentation in stainless steel tanks with partial malolactic fermentation. The wine is aged on the lees for 30 months, which adds depth and richness to its flavor profile. The greater dosage compared to Brut Réserve enhances the champagne's sweetness while maintaining its elegance.

It all started here in 1818 when Nicolas François Billecart and Elisabeth Salmon were married marking the creation of their Champagne House. This has been a family story since the beginning with Louis Salmon brother of Elisabeth and a passionate oenologist getting involved in the creation of the wines. Thus over 7 generations each member of the family has endeavoured to continue the family tradition staying faithful to the same motto: Give priority to quality strive for excellence.
