Merlot

This Merlot pairs excellently with grilled lamb, beef stews, and mushroom risotto. Its rich fruit profile and refined tannins complement hearty dishes, enhancing the overall dining experience.

Grapes for this wine are sourced from vineyards in the Coastal Region of South Africa, including Franschhoek and selected sites in Groenekloof (Darling). The soils are primarily decomposed granite (Oakleaf), and the vineyards yielded approximately 7.7 tons per hectare. The 2020 vintage benefited from increased rainfall and moderate temperatures, leading to improved vine health and balanced fruit development.

The wine matured for 24 months in 50% new French oak barriques and was bottled unfiltered. It then underwent an additional three years of bottle ageing before release.

The hand-picked grapes underwent a double-sorting process, including optical sorting, before being gently gravity-fed into wooden fermenters. Each parcel experienced a cold soak for a few days, followed by natural fermentation. Post-fermentation, the wine remained on the skins for an extended five-day maceration period to extract depth and color.
