Cheese (especially goat cheese), green vegetables (asparagus, zucchini, fresh peas, artichokes), oysters and delicate fish like sole.

Good winter rains but still below the normal average. Odd warm days during winter but some snowfall during late winter / early spring along with some rain helped dam levels rise. These conditions also prepped for good, even budding to start the growing season. During ripening the odd heat wave was experienced but overall lovely warm days and coolish nights allowed for perfect ripening and earlier picking dates. This resulting in lovely fresh, flavoured and rich wines with relatively low alcohol levels.

On fine lees for 6 months in Stainless Steel tanks

Waterford Estate is situated in the Blaauwklippen Valley on the rolling slopes of the Helderberg Mountain in the well-known Stellenbosch region. Waterford Estate prides themselves in making Fine Wine from carefully selected grapes. Winemaker, Mark Le Roux and viticulturist, David van Schalkwyk both believe a Fine Wine displays the character of its cultivar and a true sense of place. A Fine Wine should reflect the length on the palate, has a complexity of flavours, internal harmony between aromatics and the palate, and balance between its essential components.
